Pan-Seared Salmon with Creamy Lemon Dill Sauce Recipe

Ingredients
  

  • 4 (6 oz) salmon fillets, skin-on preferred
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 1/2 cup heavy cream
  • 1 tsp lemon zest
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh dill

Method
 

  1. Heat olive oil in a large skillet over medium-high. Pat salmon dry, season with salt and pepper. Cook skin-side down 4 minutes, flip and cook 2 minutes. Transfer to a plate.
  2. Lower heat to medium, melt butter, add garlic and cook 30 seconds. Pour in cream, scrape pan, and bubble 1 minute until thickened.
  3. Remove from heat, stir in lemon zest, lemon juice, and dill. Taste and add a pinch of salt if needed.
  4. Return salmon to skillet or plate, spoon sauce over each fillet and serve immediately.

Notes

For medium-rare salmon, pull the fillets at 120°F (49°C). Skin-on fillets give the best texture, but skinless work fine. Let the salmon rest a couple of minutes off the heat before spooning the sauce over so it finishes cooking gently.
