- Heat olive oil in a large skillet over medium-high. Pat salmon dry, season with salt and pepper. Cook skin-side down 4 minutes, flip and cook 2 minutes. Transfer to a plate.
- Lower heat to medium, melt butter, add garlic and cook 30 seconds. Pour in cream, scrape pan, and bubble 1 minute until thickened.
- Remove from heat, stir in lemon zest, lemon juice, and dill. Taste and add a pinch of salt if needed.
- Return salmon to skillet or plate, spoon sauce over each fillet and serve immediately.
Notes
For medium-rare salmon, pull the fillets at 120°F (49°C). Skin-on fillets give the best texture, but skinless work fine. Let the salmon rest a couple of minutes off the heat before spooning the sauce over so it finishes cooking gently.
