- Dry the chicken, season with salt and pepper, and sear skin-side down in hot oil for 7 minutes until golden and crisp.
- Remove the chicken, reduce heat to medium, add garlic and cook until fragrant. Pour in broth and lemon juice, scrape up browned bits, then return chicken skin-side up.
- Bring to a simmer, cover, and cook on low for 15 to 18 minutes until the chicken reaches 165°F.
- Transfer the chicken to a platter. Stir butter into the sauce until glossy, add lemon zest and parsley, then spoon the sauce over the chicken and serve.
Notes
If the sauce is thinner than you like, let it bubble uncovered for a minute or two before adding the butter. A little extra lemon zest shaken over the top right before serving makes it pop.
