Ingredients

  • 2 (6 oz) skin-on cod fillets, patted very dry
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • 2 tbsp unsalted butter, divided
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 lemon
  • 2 tbsp fresh parsley, chopped

Method

  1. Season both sides of the dried cod fillets with salt and pepper.
  2. Heat olive oil and 1 tbsp butter in a large skillet over medium-high until shimmering. Add cod skin-side down and cook 4 to 5 minutes without moving, until golden and released. Flip and cook 2 to 3 minutes until opaque. Transfer to a plate.
  3. Reduce heat to medium, add remaining butter and garlic, cook 30 seconds. Stir in juice from half the lemon off the heat, then parsley.
  4. Plate the fillets and spoon the lemon butter sauce over the top. Serve with lemon wedges.

Notes

If the fillets are thicker than an inch, add a minute per side and check that the center is just opaque. A thin metal spatula makes flipping easier and helps keep the crust intact.
