Ingredients

  • 1 lb chicken breast tenderloins
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley
  • Lemon wedges, for serving

Method

  1. Pat tenderloins dry and season both sides with salt and pepper. Let rest 5 minutes.
  2. Heat oil in a large skillet over medium-high. Sear chicken undisturbed for 3 to 4 minutes until golden.
  3. Flip chicken. Lower heat to medium, add butter, garlic, and lemon juice around the pieces.
  4. Tilt the skillet and spoon the hot butter over the chicken for 2 minutes, until the thickest part reaches 165°F. Stir in parsley.
  5. Rest chicken on a board briefly, slice against the grain, and spoon the pan sauce over the top. Serve with lemon wedges.

Notes

Let the chicken rest for 2 to 3 minutes before slicing so the juices settle. If you need to keep the first batch warm while cooking a second, place it on a plate covered loosely with foil in a 200°F oven.
