Method
- Pat tenderloins dry and season both sides with salt and pepper. Let rest 5 minutes.
- Heat oil in a large skillet over medium-high. Sear chicken undisturbed for 3 to 4 minutes until golden.
- Flip chicken. Lower heat to medium, add butter, garlic, and lemon juice around the pieces.
- Tilt the skillet and spoon the hot butter over the chicken for 2 minutes, until the thickest part reaches 165°F. Stir in parsley.
- Rest chicken on a board briefly, slice against the grain, and spoon the pan sauce over the top. Serve with lemon wedges.
Notes
Let the chicken rest for 2 to 3 minutes before slicing so the juices settle. If you need to keep the first batch warm while cooking a second, place it on a plate covered loosely with foil in a 200°F oven.
