Pan-Seared Carnivore Chicken Thighs Recipe

Ingredients
  

  • 4 bone-in, skin-on chicken thighs (about 6 oz each)
  • 2 tbsp unsalted butter (or beef tallow)
  • 1 tsp coarse salt

Method
 

  1. Pat the thighs very dry and season all over with the salt. Let them sit 10 to 15 minutes while you heat the skillet.
  2. Melt the butter in a heavy skillet over medium-high heat. Place the thighs skin side down without crowding, and cook 5 to 7 minutes until deep golden and the skin releases easily.
  3. Flip the thighs, reduce heat to medium, and cook 10 to 12 minutes until an instant-read thermometer reads 165°F (74°C). Cover loosely with a lid for the last few minutes if the thighs are thick.
  4. Transfer to a plate and rest uncovered for 5 minutes. Serve hot.

Notes

If you want the skin extra crisp, press the thighs down with a spatula for the first 30 seconds of searing. For very thick thighs, covering the pan toward the end prevents the outside from burning before the inside is done.
