Pan Roasted Brussels Sprouts Recipe

Ingredients
  

  • 1 lb Brussels sprouts, trimmed and halved lengthwise
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tsp fresh lemon juice or balsamic vinegar

Method
 

  1. Heat a large cast iron skillet over medium-high heat for 2 minutes, then add the olive oil. Arrange the sprouts cut side down in a single layer and cook undisturbed for 4 to 5 minutes.
  2. Flip the sprouts to the rounded side, season with salt and pepper, and cook 3 to 4 minutes more until tender and caramelized.
  3. Push the sprouts aside, melt the butter with the garlic in the center for 30 seconds, then toss everything together and cook 15 seconds longer.
  4. Off the heat, squeeze the lemon juice or vinegar over the sprouts, toss once more, and serve immediately.

Notes

You can trim and halve the sprouts up to a day ahead and store them in a zip-top bag in the fridge. If you have very large sprouts, cut them into quarters instead of halves so they cook through on the same timeline.
