Ingredients
  

  • 8 oz fresh egg noodles
  • 2 boneless skinless chicken breasts, sliced into thin strips
  • 1 tbsp vegetable oil, plus more as needed
  • 2 cups broccoli florets
  • 1 carrot, julienned or thinly sliced
  • 3 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • Sliced green onions and toasted sesame seeds, for serving

Method
 

  1. Heat the oil in a large skillet over high heat. Season chicken strips with salt and pepper, then sear in a single layer for about 3 minutes per side until golden and cooked through. Set aside.
  2. Add more oil, then stir-fry the broccoli and carrot for 2 minutes. Add the garlic and cook 30 seconds until fragrant.
  3. Separate or cook the noodles according to type. Push vegetables aside, add oil, and place noodles in the pan. Spread them flat and let them crisp for 2-3 minutes per side without moving.
  4. Return the chicken to the pan. Pour in the soy sauce, oyster sauce, sesame oil, and sugar mixture. Toss everything for 1 minute until coated and glossy.
  5. Divide among bowls, top with green onions and sesame seeds, and serve immediately.

Notes

This dish moves fast, so have all ingredients ready before you start cooking. Fresh egg noodles are the quickest option; dried noodles will add about 5 minutes to the prep time for boiling. For extra-crispy noodles, let them sit a full 3 minutes before flipping.
