Method
- Cook sushi rice, season with rice vinegar, sugar, and salt, then cool for 15 minutes.
- Shape the rice into 2-inch cakes about 1/2 inch thick using wet hands.
- Pan-fry the cakes in a mix of vegetable and sesame oil over medium-high heat for 3-4 minutes per side until crisp. Drain on paper towels.
- Dice tuna and fold with mayonnaise, sriracha, soy sauce, sesame oil, and scallions. Keep chilled.
- Top each rice cake with spicy tuna, a jalapeño slice, and optional avocado. Serve immediately.
Notes
The contrast of hot rice and cold tuna is best right after assembling. If you’re making these for a crowd, keep the fried rice cakes warm in a low oven and let guests top their own.
