Pan-Fried Cod Recipe

Ingredients
  

  • 4 cod fillets, about 6 oz each
  • 1/2 cup all-purpose flour
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 1 lemon
  • 2 tbsp chopped fresh parsley

Method
 

  1. Pat the cod fillets dry. Combine flour, salt, and pepper on a plate and lightly coat each fillet, shaking off the excess.
  2. Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Cook the fillets for 3 to 4 minutes per side until golden and cooked through.
  3. Remove the fish to a plate. Reduce heat to low, add remaining 2 tbsp butter and the lemon juice to the pan, and swirl for 30 seconds. Spoon the sauce over the fillets, top with parsley and lemon slices, and serve.

Notes

Handle the fillets gently during flipping; cod is tender and can break apart if rushed. If your fillets are uneven in thickness, pull the thinner ones from the pan a minute early so they don’t overcook.
