- Heat the oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart, until browned and no longer pink, about 5-6 minutes.
- Reduce heat to medium, add the onion, bell pepper, and garlic; cook until softened, 3-4 minutes.
- Stir in the tomato paste, apple cider vinegar, coconut aminos, coconut sugar (if using), smoked paprika, salt, and pepper. Cook 1 minute, stirring constantly.
- Add ¼ cup water, bring to a simmer, and cook uncovered until the sauce thickens, 8-10 minutes, stirring occasionally.
- Taste and adjust seasoning. Spoon the filling into butter lettuce leaves, top with red onion or pickles if desired, and serve right away.
Notes
For Whole30, omit the coconut sugar. The sauce will still be savory and rich. If you prefer a thicker sauce, let it simmer an extra 5 minutes. Leftovers reheat well on the stovetop with a splash of water.
