Paleo Pumpkin Muffins Recipe

Ingredients
  

  • 2 cups almond flour, super-fine blanched
  • 2 tbsp coconut flour
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice
  • ¼ tsp salt
  • 3 large eggs
  • 1 cup pumpkin puree
  • ⅓ cup maple syrup
  • ¼ cup melted coconut oil
  • 1 tsp vanilla extract
  • 1 tbsp apple cider vinegar

Method
 

  1. Preheat oven to 350°F. Line a 12-cup muffin pan with parchment liners or grease cups. Whisk almond flour, coconut flour, baking soda, pumpkin pie spice, and salt in a large bowl.
  2. In another bowl, whisk eggs, pumpkin puree, maple syrup, melted coconut oil, vanilla, and apple cider vinegar until smooth.
  3. Pour wet mixture into dry ingredients and fold with a spatula just until combined. Batter will be thick.
  4. Divide batter evenly among muffin cups, filling each about three-quarters full. Bake 18–22 minutes until a toothpick inserted in the center comes out clean.
  5. Cool muffins in the pan for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes

Let the muffins cool completely before storing; they'll get gummy if warm and sealed up. They freeze beautifully, so make a double batch and pull one out when a craving hits.
