Palak Paneer Recipe

Ingredients
  

  • 1 lb fresh baby spinach (about 12 cups)
  • 8 oz paneer, cut into ¾-inch cubes
  • 2 tbsp neutral oil, divided
  • 1 medium yellow onion, chopped (about 1 cup)
  • 4 garlic cloves, smashed and chopped
  • 1½ inch piece fresh ginger, peeled and sliced
  • 1 to 2 green chilies, slit lengthwise
  • 1 tsp cumin seeds
  • ¼ tsp ground turmeric
  • ½ tsp garam masala, plus extra for serving
  • 1 tsp salt
  • 1 tsp sugar
  • 2 tbsp cold water

Method
 

  1. Bring a pot of water to a boil. Add the spinach, cook for 90 seconds until wilted, then drain and rinse with cold water. Squeeze gently and set aside.
  2. Heat 1½ tbsp oil in a skillet over medium heat. Add cumin seeds and cook until they pop, about 30 seconds. Add onion and cook until softened, 5 minutes. Stir in garlic, ginger, and chili and cook for 2 minutes.
  3. Transfer the onion mixture to a blender. Add the spinach, turmeric, garam masala, salt, sugar, and cold water. Blend until completely smooth.
  4. Wipe the skillet clean, then warm the remaining ½ tbsp oil over medium heat. Pour in the purée and cook for 5 minutes, stirring occasionally, until the colour deepens slightly.
  5. Lower the heat, fold in the paneer, and warm through for 2 minutes. Spoon into bowls, sprinkle with extra garam masala, and serve hot.

Notes

The spinach purée can be made a few hours ahead and kept in the fridge. Reheat it gently and add the paneer just before serving so the sauce stays bright. The colour is at its most vivid right after cooking, so enjoy it right away for the prettiest plate.
