- Mix the oyster sauce, soy sauce, rice vinegar, sugar, and cornstarch slurry in a small bowl until smooth.
- Season the chicken with salt and pepper. Heat 1 tbsp oil in a large skillet over medium-high heat. Sear the chicken in a single layer for 3-4 minutes per side until golden, then transfer to a plate.
- Add the remaining 1 tbsp oil and the broccoli to the same pan. Stir-fry 2 minutes, then add 2 tbsp water, cover, and steam 1 minute until crisp-tender.
- Return the chicken and any juices to the pan with the garlic and ginger. Pour in the sauce mixture and cook 1 minute, tossing constantly, until thickened and glossy.
- Toss once more and serve hot over steamed rice, spooning extra sauce from the pan on top.
Notes
If you slice the chicken ahead of time, the whole dish comes together in about 15 minutes from start to finish. For a shortcut, use pre-cut broccoli florets and jarred minced ginger.
