- In a large bowl, whisk eggs, milk, cream, brown sugar, vanilla, cinnamon, nutmeg, and salt until smooth.
- Butter a 6-quart slow cooker. Layer half the bread cubes, pour half the custard over, press gently. Repeat with remaining bread and custard. Press down to submerge, dot top with butter. Cover and refrigerate at least 8 hours.
- Let the crock sit at room temperature 20 minutes. Cook on low for 4 to 5 hours, or high for 2 to 2 1/2 hours, until center is set and edges are golden.
- Scoop portions onto plates, drizzling with maple syrup. Serve hot.
Notes
The overnight soak time is not included in the prep time. If you’re short on time, 4 hours of soaking is the minimum, but the texture will be slightly less custardy. For extra caramelization, sprinkle a little extra brown sugar over the top before cooking.
