Overnight Chicken and Waffles Casserole Recipe

Ingredients
  

  • 8 frozen buttermilk waffles
  • 2 cups diced cooked chicken
  • 4 large eggs
  • 1 ½ cups whole milk
  • ¼ cup maple syrup
  • 3 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp fine sea salt
  • Chopped pecans, for serving (optional)

Method
 

  1. Heat oven to 350°F. Butter a 9x13-inch baking dish. Tear frozen waffles into 1-inch chunks directly into the dish.
  2. Whisk eggs, milk, maple syrup, melted butter, vanilla, cinnamon, and salt until smooth.
  3. Scatter chicken over the waffle pieces, then pour custard evenly over all. Press down gently to coat.
  4. Cover tightly and refrigerate at least 4 hours, preferably overnight.
  5. Uncover and bake 35-40 minutes until golden and set. Cool 5 minutes, then slice and serve with extra maple syrup and pecans.

Notes

This casserole requires at least 4 hours of chilling time (not included in prep) for the custard to set properly. For best results, assemble the night before and bake fresh the next morning.
