Oven-Grilled Chicken Recipe

Ingredients
  

  • 4 bone-in, skin-on chicken thighs
  • 1/4 cup plain Greek yogurt
  • 2 tbsp fresh lemon juice
  • 3 cloves garlic, minced
  • 1 tbsp smoked paprika
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Method
 

  1. Mix the yogurt, lemon juice, garlic, smoked paprika, salt, and pepper. Coat the chicken and let it sit for 15 minutes at room temperature while preheating the broiler.
  2. Set an oven rack 6 inches from the broiler element and preheat the broiler to high. Brush a wire rack with olive oil and arrange the chicken skin side up with space between each piece.
  3. Broil for 10 minutes until charred, flip, and cook another 8 to 10 minutes until the internal temperature reaches 165°F.
  4. Rest the chicken for 5 minutes, then serve with extra lemon and parsley.

Notes

A wire rack gives the crispest skin, but you can place the chicken directly on a foil-lined sheet if needed. Marinate the chicken overnight in the fridge for even deeper flavor, then bring it to room temperature before broiling.
