Method
- Soak chicken in buttermilk for at least 30 minutes, refrigerated.
- Preheat oven to 425°F (220°C). Set a wire rack on a baking sheet.
- Mix cornflakes, flour, paprika, garlic powder, onion powder, salt, and pepper in a shallow dish.
- Lift chicken from buttermilk, let excess drip, then press firmly into the coating mixture.
- Arrange chicken skin side up on the rack. Spray tops generously with oil.
- Bake 35 to 40 minutes, until internal temp reaches 165°F (74°C) and coating is deep gold.
- Rest 5 minutes, then sprinkle with flaky salt and serve hot.
Notes
The 30-minute buttermilk soak is the quick version; overnight in the fridge makes the chicken even juicier. Marinating time is not included in the prep.
