Oven Fried Chicken Recipe

Ingredients
  

  • 4 bone-in, skin-on chicken thighs (about 2 lb)
  • 1 cup buttermilk
  • 1½ cups crushed cornflakes
  • ½ cup all-purpose flour
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • Cooking spray or oil mister

Method
 

  1. Soak chicken in buttermilk for at least 30 minutes, refrigerated.
  2. Preheat oven to 425°F (220°C). Set a wire rack on a baking sheet.
  3. Mix cornflakes, flour, paprika, garlic powder, onion powder, salt, and pepper in a shallow dish.
  4. Lift chicken from buttermilk, let excess drip, then press firmly into the coating mixture.
  5. Arrange chicken skin side up on the rack. Spray tops generously with oil.
  6. Bake 35 to 40 minutes, until internal temp reaches 165°F (74°C) and coating is deep gold.
  7. Rest 5 minutes, then sprinkle with flaky salt and serve hot.

Notes

The 30-minute buttermilk soak is the quick version; overnight in the fridge makes the chicken even juicier. Marinating time is not included in the prep.
