- Brown ground beef in a skillet over medium-high heat, drain fat, then stir in taco seasoning and water. Simmer until thickened, about 3 minutes.
- Spoon 1 tbsp refried beans into each taco shell, spread flat, then divide the beef and top with cheese, pressing down gently.
- Stand tacos upright in a 9x13 dish, bake at 400°F (200°C) for 10-12 minutes until cheese melts and shell edges are golden.
- Let rest 1 minute, then top with cold lettuce, tomatoes, sour cream, and salsa, and serve right away.
Notes
Stand-and-stuff shells are the easiest to assemble, but regular shells work too if you pack them tightly in the dish. If any cheese drips onto the pan, scoop up those crispy bits and pile them on top of the tacos. Serve immediately for the best crunch.
