Oven Baked Lamb Chops Recipe

Ingredients
  

  • 8 lamb loin chops (about 1 inch thick)
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tbsp finely chopped fresh rosemary
  • Zest of 1 lemon
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)

Method
 

  1. In a small bowl, mix the olive oil, garlic, rosemary, lemon zest, salt, pepper, and red pepper flakes until a paste forms.
  2. Pat the lamb chops dry. Season lightly with salt, then rub the herb paste over both sides of each chop. Let them sit at room temperature for 15 minutes while the oven heats.
  3. Preheat the oven to 450°F (230°C). Place a wire rack on a rimmed baking sheet and arrange the chops on it. Roast for 10 to 12 minutes for medium-rare (130°F / 54°C).
  4. Switch the oven to broil. Broil the chops on an upper rack for 1 to 2 minutes until sizzling and deeply browned. Transfer to a platter, rest 5 minutes, and serve with lemon wedges.

Notes

If you like your lamb a little pinker, pull the chops at 125°F (52°C) before the broil. The five-minute rest will finish the job. For a thicker herb crust, double the paste and pat it on firmly.
