- Pound chicken breasts to an even ¾-inch thickness. Rub with 1 tbsp olive oil and coat both sides with the salt, pepper, garlic powder, and smoked paprika.
- Heat the remaining 1 tbsp oil in a large oven-safe skillet over medium-high heat. Sear the breasts 3 to 4 minutes per side until deeply golden.
- Transfer the skillet to a 375°F (190°C) oven and roast 10 to 12 minutes, until the thickest part reaches 160°F (71°C) on a thermometer.
- Move chicken to a cutting board, tent with foil, and rest 5 minutes. Slice against the grain and serve warm.
Notes
If you only have thin-cut cutlets, reduce the oven time to 6 to 8 minutes. The 5-minute rest is essential for juicy meat; do not cut into the breasts right out of the oven.
