Ingredients

  • 3-4 lb boneless chuck roast
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 cup BBQ sauce
  • 1/4 cup apple cider vinegar
  • 2 tbsp Worcestershire sauce
  • 2 tbsp brown sugar
  • 1/4 tsp liquid smoke

Method

  1. Preheat oven to 300°F (150°C). Mix salt, pepper, smoked paprika, garlic powder, and onion powder. Pat roast dry, rub with oil, then coat with spice mix.
  2. In a hot Dutch oven, sear roast over medium-high heat until deeply browned, 4-5 minutes per side. Transfer to a plate.
  3. Reduce heat to medium, deglaze pot with vinegar, scraping up browned bits. Stir in BBQ sauce, Worcestershire, brown sugar, and liquid smoke. Return roast, spoon sauce over.
  4. Cover and cook in oven until fork-tender, about 3 1/2 to 4 hours. Rest 10 minutes, then shred.
  5. Toss shredded meat with sauce, spread on a foil-lined sheet pan, and broil 5-8 minutes until edges crisp. Serve immediately.

Notes

The cook time can stretch a little longer for larger roasts. If your oven runs hot, check at 3 hours and continue until the meat falls apart easily with a fork. Let the shredded meat rest in its juices if you are making it ahead, then broil right before serving for the best texture.
