Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup granulated sugar
  • 2 tbsp granulated sugar
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • 1/2 cup whole milk, at room temperature
  • 1 large navel orange

Method

  1. Preheat oven to 350°F. Whisk flour, baking powder, salt, and 3/4 cup sugar in a large bowl. Stir in melted butter, eggs, vanilla, and milk until just combined.
  2. Butter an 8-inch round cake pan. Arrange orange slices in a single layer on the bottom and sprinkle with 2 tbsp sugar.
  3. Pour batter over the oranges and smooth the top. Bake 40 to 45 minutes until golden and a toothpick comes out clean.
  4. Cool in the pan for 10 minutes, then invert onto a plate and serve warm or at room temperature.

Notes

The cake will keep for about 4 days at room temperature, but the crunchy sugar top is best the day it’s made. To revive a lost crunch, warm slices in a low oven for 5 minutes. Let the cake cool fully before covering if you plan to store it, or the trapped steam will make the crust tacky.
