Ingredients
  

  • 4 cups (520 g) all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1/2 cup (120 ml) whole milk
  • 1/4 cup (50 g) granulated sugar
  • 2 large eggs
  • 1/2 cup (115 g) unsalted butter
  • 1 tsp fine sea salt
  • Zest of 1 large orange
  • 1/4 cup (60 ml) fresh orange juice
  • 1/2 cup (115 g) unsalted butter, very soft
  • 3/4 cup (150 g) packed light brown sugar
  • 2 tbsp ground cinnamon
  • Zest of 1 large orange
  • 4 oz (115 g) cream cheese
  • 1/4 cup (60 g) unsalted butter
  • 1 1/2 cups (180 g) powdered sugar
  • 1 tsp vanilla extract
  • 3 tbsp fresh orange juice or milk

Method
 

  1. Stir the yeast and sugar into the warm milk; let it sit for 5‑8 minutes until foamy.
  2. Whisk the flour and salt, then mix in the yeast mixture, orange juice, zest, eggs, and melted butter. Knead for 8‑10 minutes until smooth and elastic.
  3. Let the dough rise in a covered bowl until doubled, about 1 to 1 1/2 hours.
  4. Roll the dough into a 12×18‑inch rectangle, spread with soft butter, and sprinkle with the brown sugar, cinnamon, and orange zest. Roll up tightly into a log and slice into 12 pieces.
  5. Arrange the slices in a buttered 9×13‑inch pan, cover, and let rise until puffy, about 45 minutes. Bake at 350°F (180°C) for 25‑28 minutes until golden.
  6. Beat the cream cheese, butter, powdered sugar, vanilla, and orange juice into a smooth glaze. Spread over the warm rolls and serve.

Notes

For an overnight rise, after shaping the rolls cover the pan and refrigerate for 8‑12 hours. In the morning, let them sit at room temperature for 30 minutes, then bake as directed, adding 2‑3 extra minutes.
