Ingredients

  • 1 lb boneless, skinless chicken thighs (or breasts)
  • ¼ cup fresh orange juice
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 2 tsp orange zest
  • 2 garlic cloves, minced
  • ½ tsp grated fresh ginger
  • ¼ tsp black pepper

Method

  1. Whisk orange juice, soy sauce, honey, olive oil, orange zest, garlic, ginger, and pepper in a bowl until the honey dissolves.
  2. Place chicken in a zip-top bag or dish, pour the marinade over, and coat evenly. Refrigerate for 30 minutes to 4 hours.
  3. Heat a grill, grill pan, or cast-iron skillet to medium-high. Shake off excess marinade and cook chicken 6 to 8 minutes per side, until 165°F internally and the surface is glossy and lightly charred.
  4. Rest the chicken 5 minutes before slicing. Spoon any resting juices back over the top.

Notes

Cooking times will shift with chicken thickness. If your pieces are uneven, pound breasts to an even ¾ inch or pull thin thighs a minute early. The marinade’s sugars can darken fast over high heat, so keep an eye on the edges and lower the heat a notch if they get too dark before the inside is cooked.
