Orange Almond Cake Recipe

Ingredients
  

  • 1 large navel orange (about 10 oz), scrubbed clean
  • 3 large eggs, at room temperature
  • 3/4 cup (150g) granulated sugar
  • 2 cups (200g) blanched almond flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons sliced almonds (optional)

Method
 

  1. Simmer the whole orange in water for 1 hour until soft. Drain, cool, cut into quarters, remove seeds, and purée the entire fruit in a food processor until smooth.
  2. Preheat oven to 350°F (175°C). Oil a round cake pan and line the bottom with parchment. Whisk eggs and sugar until pale and thick, then whisk in the orange purée and vanilla.
  3. Fold in almond flour, baking powder, and salt with a spatula until no dry spots remain. The batter will be thick.
  4. Spread batter into the pan, top with sliced almonds if using, and bake 45–55 minutes (see pan guide) until deeply golden and a toothpick comes out with just a few crumbs.
  5. Cool in the pan 10 minutes, then turn out onto a rack, peel off parchment, and cool completely before slicing.

Notes

This cake tastes even better the next day as the orange and almond flavors settle. Be sure the orange is cooled enough to handle before you purée it so the mixture does not cook the eggs later.
