- Pat the chicken dry and season with salt and pepper. Heat the oil in a large skillet over medium-high heat. Sear the thighs skin side down until deep golden, about 6 minutes. Flip and sear the other side for 4 minutes, then transfer to a plate.
- Whisk together the soy sauce, honey, rice vinegar, garlic, and sesame oil until combined.
- Lower the heat to medium, pour the sauce into the skillet, and scrape up any browned bits. Return the chicken skin side up and simmer for 8 to 10 minutes, flipping halfway, until the sauce is syrupy and the chicken reaches 165°F.
- Plate the thighs, spoon the sauce over them, and garnish with scallions and sesame seeds. Serve immediately.
Notes
If you prefer boneless thighs, reduce the searing time by a couple of minutes per side and check the internal temperature early. The sauce will continue to thicken as it cools, so serve right away for the glossiest finish.
