One-Skillet Sausage, Cabbage, and Potatoes Recipe

Ingredients
  

  • 1 lb smoked sausage, sliced into 1/2-inch rounds
  • 3 tbsp olive oil, divided
  • 1 medium yellow onion, sliced
  • 3 cloves garlic, minced
  • 1 small green cabbage (about 1 1/2 lbs), thinly sliced
  • 1 lb baby potatoes, halved
  • 1/2 tsp caraway seeds (optional)
  • 1/4 cup low-sodium chicken broth
  • 1 tbsp apple cider vinegar
  • Salt and black pepper to taste

Method
 

  1. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Brown sausage for 4-5 minutes, turning once. Transfer to a plate.
  2. Add 1 tbsp olive oil, onion, and a pinch of salt. Cook 3-4 minutes until soft and golden, then add garlic and cook 30 seconds.
  3. Add remaining 1 tbsp oil, potatoes, cabbage, caraway seeds (if using), broth, 1/2 tsp salt, and pepper. Stir, cover, and cook on medium for 12-15 minutes until potatoes are tender, stirring once.
  4. Return sausage to the skillet, drizzle with vinegar, and toss. Cook uncovered 2 minutes. Adjust seasoning and serve hot.

Notes

If things look dry during cooking, a splash of extra broth or water does the trick. Leftovers are even better the next day.
