One-Pot Turkey Sweet Potato Chili Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 lb ground turkey
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp kosher salt
  • 1 large sweet potato (about 12 oz), peeled and cut into ½-inch dice
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (14.5 oz) can fire-roasted diced tomatoes
  • 2 cups low-sodium chicken broth
  • Juice of 1 lime
  • Chopped cilantro, diced avocado, and sour cream for serving

Method
 

  1. Heat olive oil in a large pot over medium heat. Add onion and bell pepper and cook until softened, about 5 minutes. Stir in garlic and cook 30 seconds.
  2. Add ground turkey and cook, breaking it up, until no longer pink, about 5 to 7 minutes. Stir in chili powder, cumin, smoked paprika, and salt and cook 30 seconds.
  3. Add sweet potato, black beans, diced tomatoes with juices, and chicken broth. Bring to a boil, then reduce heat, cover, and simmer until sweet potatoes are tender, about 20 minutes, stirring occasionally.
  4. Remove from heat, stir in lime juice, and adjust salt to taste. Ladle into bowls and top with cilantro, avocado, and sour cream.

Notes

Let the chili rest off the heat for 5 to 10 minutes before serving so the broth thickens slightly and the flavors meld. If you are reheating leftovers, add a splash of broth to loosen it up.
