Ingredients

  • 2 lbs beef stew meat, cut into 1-inch pieces
  • 2 tbsp vegetable oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme (optional)

Method

  1. Heat oil in a large Dutch oven over medium-high. Pat beef dry, season with a pinch of salt and pepper. Sear in batches until deeply browned on all sides, about 4 minutes per side. Transfer to a plate.
  2. Reduce heat to medium, add onion and cook 4 to 5 minutes until soft. Stir in garlic and cook 30 seconds.
  3. Sprinkle flour over onions, cook 1 minute. Pour in beef broth, Worcestershire, salt, pepper, and thyme. Scrape the bottom of the pot.
  4. Return beef to pot, bring to a boil. Cover, reduce heat to low, and simmer 60 minutes until beef is fork-tender.
  5. Ladle over noodles, potatoes, or rice and serve hot, with extra gravy spooned on top.

Notes

Patting the beef dry before searing helps it get a deep crust. The beef can simmer up to 90 minutes for extra tenderness if needed. If the gravy thickens too much, stir in a little warm broth. Leftovers keep well refrigerated for a few days.
