- Heat oil in a large Dutch oven over medium-high. Pat beef dry, season with a pinch of salt and pepper. Sear in batches until deeply browned on all sides, about 4 minutes per side. Transfer to a plate.
- Reduce heat to medium, add onion and cook 4 to 5 minutes until soft. Stir in garlic and cook 30 seconds.
- Sprinkle flour over onions, cook 1 minute. Pour in beef broth, Worcestershire, salt, pepper, and thyme. Scrape the bottom of the pot.
- Return beef to pot, bring to a boil. Cover, reduce heat to low, and simmer 60 minutes until beef is fork-tender.
- Ladle over noodles, potatoes, or rice and serve hot, with extra gravy spooned on top.
Notes
Patting the beef dry before searing helps it get a deep crust. The beef can simmer up to 90 minutes for extra tenderness if needed. If the gravy thickens too much, stir in a little warm broth. Leftovers keep well refrigerated for a few days.
