Method
- Heat olive oil in a large pot over medium-high heat. Brown the sausage for 4 to 5 minutes, then remove to a plate.
- Reduce heat to medium, add onion, and cook 3 minutes until soft. Stir in garlic for 30 seconds.
- Add tomatoes, broth, red pepper flakes, salt, pepper, and pasta. Return sausage to the pot, bring to a boil, cover, and simmer over medium-low for 12 minutes, stirring once.
- Remove from heat. Stir in heavy cream and parmesan until the sauce thickens. Serve topped with parsley.
Notes
Leftover pasta will thicken in the fridge, so reheat with a splash of broth to bring back that creamy consistency. If the sauce seems too thin after adding the cream, let it sit off the heat for a couple minutes longer, the parmesan and starch will continue to tighten it up.
