One Pot Smoked Sausage Pasta Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 14 oz smoked sausage, sliced into ½-inch rounds
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 14.5 oz can diced tomatoes, undrained
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 8 oz short pasta (penne, rigatoni, or fusilli)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • ½ cup grated parmesan, plus extra for serving
  • 2 tbsp chopped fresh parsley

Method
 

  1. Heat olive oil in a large pot over medium-high heat. Brown the sausage for 4 to 5 minutes, then remove to a plate.
  2. Reduce heat to medium, add onion, and cook 3 minutes until soft. Stir in garlic for 30 seconds.
  3. Add tomatoes, broth, red pepper flakes, salt, pepper, and pasta. Return sausage to the pot, bring to a boil, cover, and simmer over medium-low for 12 minutes, stirring once.
  4. Remove from heat. Stir in heavy cream and parmesan until the sauce thickens. Serve topped with parsley.

Notes

Leftover pasta will thicken in the fridge, so reheat with a splash of broth to bring back that creamy consistency. If the sauce seems too thin after adding the cream, let it sit off the heat for a couple minutes longer, the parmesan and starch will continue to tighten it up.
