One Pot Sausage Pasta Recipe

Ingredients
  

  • 1 lb Italian sausage, casings removed
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp dried Italian seasoning
  • Salt and black pepper
  • 8 oz dry short pasta (about 2 cups)
  • 2 cups fresh baby spinach
  • 1/2 cup grated Parmesan cheese

Method
 

  1. Brown the crumbled sausage in a large pot over medium-high heat for 5 to 7 minutes. Remove the sausage to a plate, leaving the drippings in the pot.
  2. Sauté the onion in the same pot for 3 to 4 minutes until softened, then add garlic and cook 30 seconds.
  3. Stir in the diced tomatoes, broth, cream, Italian seasoning, salt, and pepper. Bring to a boil, add the pasta and sausage, reduce to medium-low, cover, and simmer 12 to 15 minutes until pasta is tender.
  4. Remove from heat, stir in spinach until wilted, then fold in Parmesan. Serve immediately with extra cheese.

Notes

The pasta will continue to soak up sauce as it sits, so it’s at its creamiest right after cooking. When reheating leftovers, add a small splash of milk or broth and warm gently. For a spicier version, use hot sausage and a pinch of red pepper flakes.
