One-Pot Pink Sauce Pasta Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 1 small onion, finely diced
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 1 can (14 oz) crushed tomatoes
  • 3 cups vegetable broth
  • 12 oz dry pasta
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan
  • Fresh basil leaves, for garnish

Method
 

  1. Heat the olive oil in a large pot over medium heat. Sauté the onion until softened, 4 to 5 minutes, then add the garlic and cook 30 seconds.
  2. Stir in the tomato paste and cook for 1 minute. Add the crushed tomatoes, broth, salt, and pepper, and bring to a simmer.
  3. Add the dry pasta, stir, cover, and cook on medium-low for 10 to 12 minutes, stirring occasionally, until pasta is al dente and liquid is mostly absorbed.
  4. Remove from heat, swirl in the cream until pink, then stir in the Parmesan. Serve with extra Parmesan and torn basil.

Notes

The sauce thickens as it cools. If making ahead, undercook the pasta by 1 to 2 minutes and reheat gently with a splash of broth. Always add the cream off the heat to keep it from curdling.
