- Heat olive oil in a large, deep skillet over medium-high. Add ground beef and diced onion, cook until beef is browned and onion soft, about 5-7 minutes.
- Stir in garlic, oregano, and red pepper flakes; cook 1 minute until fragrant.
- Pour in marinara and 2 cups water (or broth), scrape up browned bits, bring to a simmer. Stir in broken lasagna noodles.
- Reduce heat to medium-low, cover, and simmer 12-14 minutes, stirring once halfway, until noodles are tender and sauce thick.
- Remove from heat. Dollop ricotta around the pan, top with mozzarella and Parmesan, cover and let sit 2-3 minutes until cheese melts. Serve hot, topped with fresh basil.
Notes
For extra protein, toss in a handful of chopped spinach when you add the noodles. This dish tastes best immediately, but leftovers hold well and absorb flavor overnight.
