Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 24 oz jar marinara sauce
  • 2 cups water
  • 8 oz lasagna noodles, broken into 2-inch pieces
  • 1 cup whole-milk ricotta
  • 1 1/2 cups shredded low-moisture mozzarella
  • 1/4 cup grated Parmesan
  • Fresh basil leaves, for garnish

Method

  1. Heat olive oil in a large Dutch oven over medium-high heat. Add ground beef and onion; cook for 5 minutes, breaking the meat apart, until browned.
  2. Stir in garlic, salt, and pepper. Cook 30 seconds, then add marinara sauce and water. Scrape up any browned bits.
  3. Bring to a boil, stir in broken lasagna noodles, lower heat to a simmer, cover, and cook for 15 minutes, stirring gently once.
  4. Dollop ricotta and mozzarella over the top without stirring. Cover and cook on low heat for 5 minutes, until melted.
  5. Ladle into bowls, top with Parmesan and torn basil, and serve hot.

Notes

Regular dry lasagna noodles work best; no-boil noodles will disintegrate. If the pasta absorbs all the liquid before it is tender, add an extra splash of water and continue simmering.
