Ingredients
Method
- Brown the sausage in a large pot over medium-high heat, breaking it apart, about 8 minutes. Transfer to a plate, leaving a little fat in the pot.
- Lower heat to medium. Cook the onion until soft, 4 minutes. Stir in garlic and tomato paste; cook 1 minute.
- Pour in broth, scrape up browned bits, add pasta and salt. Bring to a boil, then simmer uncovered, stirring often, until pasta is tender, 12 to 15 minutes.
- Return sausage and spinach to the pot. Once spinach wilts, stir in cream and Parmesan over low heat until the sauce is creamy.
- Spoon into bowls, top with extra Parmesan and black pepper, and serve hot.
Notes
If your sausage is very lean, add a small drizzle of olive oil to the pot before browning. For a lighter sauce, swap half-and-half for the heavy cream, but keep it off the heat once added so it does not separate.
