- Brown the ground beef in a large pot over medium-high heat for about 6 minutes, then drain most of the fat.
- Lower the heat to medium, add the onion, and cook 4 minutes until soft. Stir in the garlic, chili powder, and cumin for 30 seconds.
- Add the broth and Rotel, bring to a boil, then add the pasta. Cover and simmer on medium-low for 8 minutes, stirring once.
- Turn off the heat. Stir in the cream cheese until melted, then add the cheddar and stir until smooth. Season with salt and pepper.
- Spoon into bowls and serve right away with cilantro or sour cream if you like.
Notes
The pasta will absorb more liquid as it cools, so it’s at its creamiest right out of the pot. If you need to hold it for a few minutes, leave the lid on and keep the heat off.
