One-Pot Creamy Pumpkin Pasta Recipe

Ingredients
  

  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 10 fresh sage leaves
  • 1 cup canned pumpkin puree
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 8 oz dried penne pasta
  • 1/4 tsp freshly grated nutmeg
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • Pinch red pepper flakes (optional)

Method
 

  1. Warm the olive oil in a large pot over medium heat. Add the garlic and sage and cook until fragrant, about 1 minute.
  2. Stir in the dry penne and toast for 2 minutes, stirring often.
  3. Add the pumpkin puree, broth, nutmeg, salt, pepper, and red pepper flakes. Bring to a boil, then reduce the heat and simmer for 10 to 12 minutes, stirring occasionally, until the pasta is tender and the sauce thickens.
  4. Remove from heat and stir in the heavy cream and Parmesan until the cheese melts. Taste for salt, then serve immediately.

Notes

Fresh sage leaves fried in a little butter make a lovely garnish. If you prefer a thinner sauce, add a splash of warm broth right before serving.
