Method
- Cook the pasta in well-salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
- In the same pot, melt the butter over medium heat. Saute the garlic for 30 seconds until fragrant.
- Add the cream and salt, bring to a gentle simmer, then remove from heat. Whisk in the Parmesan a handful at a time until smooth.
- Toss the hot pasta with the sauce, adding splashes of pasta water until creamy and loose. Serve immediately with extra Parmesan and black pepper.
Notes
The sauce will thicken as it sits, whether in the pot or in the fridge. When reheating or if it feels too tight, stir in a little warm pasta water or milk to bring back that silky texture.
