One-Pot Creamy Garlic Beef Pasta Recipe

Ingredients
  

  • 1 lb ground beef (85% lean)
  • 1 small yellow onion, diced small
  • 6 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups beef broth (low-sodium)
  • 1 cup heavy cream
  • 8 oz rigatoni
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • Grated Parmesan and fresh parsley, for serving

Method
 

  1. Heat a large deep skillet over medium-high heat. Crumble in the ground beef and cook, breaking it apart, until browned, 5 to 7 minutes. Drain all but 1 tablespoon of fat.
  2. Add the butter and onion to the skillet and cook until softened, about 3 minutes. Stir in the garlic and cook 1 minute until fragrant.
  3. Sprinkle the flour over the mixture and stir 1 minute. Slowly pour in the beef broth while scraping up any browned bits, then add the salt and pepper.
  4. Stir in the rigatoni, bring to a boil, then cover and simmer over low heat until the pasta is tender and most of the liquid is absorbed, 10 to 12 minutes, stirring once.
  5. Remove from the heat, stir in the heavy cream, and serve topped with Parmesan and parsley.

Notes

The pasta will absorb more liquid as it sits, so if you are making it ahead, add a splash of broth or milk when reheating. For a thicker sauce, let it stand off the heat for 2 minutes before serving.
