- Set a large heavy pot over medium-low heat, add butter and oil, then stir in onions, salt, and sugar. Cook, stirring often, for 20 to 25 minutes until deeply golden.
- Add garlic and cook 30 seconds until fragrant. Pour in broth, scrape up browned bits, and bring to a boil.
- Add pasta, reduce heat to a simmer, and cook 10 to 12 minutes until tender and most liquid is absorbed.
- Remove from heat, stir in cream and parmesan until smooth, then serve immediately with extra cheese and herbs.
Notes
The sauce thickens as it cools, so spoon it into bowls right away. If the pasta does sit too long and tightens up, reheat with a splash of broth.
