One-Pot Creamy Broccoli Alfredo Pasta Recipe

Ingredients
  

  • 8 oz fettuccine or penne
  • 2 cups broccoli florets
  • 2 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 3 cups low-sodium chicken or vegetable broth
  • ½ cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ¼ tsp fine sea salt, plus more to taste
  • ¼ tsp freshly ground black pepper, plus more for serving
  • Pinch of freshly grated nutmeg (optional)

Method
 

  1. Melt the butter in a large pot over medium heat. Add garlic and cook 1 minute until fragrant. Pour in broth and 1 cup water, bring to a boil, then stir in pasta and salt. Cook 5 minutes, stirring occasionally.
  2. Lower heat to medium-high, add broccoli, and cook 3 to 4 minutes until pasta is al dente and broccoli is tender.
  3. Remove from heat. Stir in heavy cream, Parmesan, black pepper, and nutmeg. Toss until cheese melts and sauce thickens. Taste and adjust salt.
  4. Spoon into bowls and top with extra Parmesan and black pepper. Serve immediately.

Notes

Let the finished pasta sit off the heat for a minute before serving so the sauce thickens just enough to coat each piece. If the sauce tightens up too much as it sits, stir in a tablespoon of warm broth or milk to loosen it.
