One-Pot Creamy Boursin Mac and Cheese Recipe

Ingredients
  

  • 1 lb elbow macaroni
  • 2 tbsp unsalted butter
  • 1 (5.2 oz) package Boursin Garlic & Fine Herbs cheese
  • 1 cup whole milk
  • ½ cup finely grated Parmesan
  • Kosher salt and black pepper
  • Snipped fresh chives (optional)

Method
 

  1. Bring a large pot of salted water to a boil, cook macaroni until just al dente, drain reserving 1 cup pasta water.
  2. Melt butter in the same pot, add Boursin, milk, and ½ cup pasta water, stir until smooth, about 2 minutes.
  3. Return pasta to pot, toss to coat, cook 1 to 2 minutes until glossy.
  4. Off heat, stir in Parmesan and pepper, serve with chives.

Notes

Reserve more pasta water than you think; you can use extra to loosen the sauce if it thickens too much. Leftover mac and cheese will firm up overnight; reheat gently with a splash of milk.
