Method
- Bring a large pot of salted water to a boil, cook macaroni until just al dente, drain reserving 1 cup pasta water.
- Melt butter in the same pot, add Boursin, milk, and ½ cup pasta water, stir until smooth, about 2 minutes.
- Return pasta to pot, toss to coat, cook 1 to 2 minutes until glossy.
- Off heat, stir in Parmesan and pepper, serve with chives.
Notes
Reserve more pasta water than you think; you can use extra to loosen the sauce if it thickens too much. Leftover mac and cheese will firm up overnight; reheat gently with a splash of milk.
