- Heat a large pot over medium-high heat. Add the beef and onion, cook for 6 to 8 minutes, breaking the meat apart, until browned. Drain excess fat, leaving about 1 tablespoon in the pot.
- Stir in the garlic, ketchup, mustard, Worcestershire sauce, salt, and pepper. Cook 1 minute until fragrant. Pour in the beef broth and milk, bring to a boil, then add the dry pasta and stir.
- Reduce heat to medium-low, cover, and cook for 10 to 12 minutes, stirring once or twice, until the pasta is tender and the sauce is creamy.
- Remove from heat and gradually stir in the cheddar cheese until fully melted and smooth, about 1 to 2 minutes.
- Divide into bowls and top with pickles, tomatoes, and any other toppings. Serve immediately.
Notes
The sauce will continue to thicken as it sits, so aim to serve the pasta right after adding the cheese. If you need to hold it for a few minutes, keep the pot covered off the heat and stir in a little extra milk before serving if needed.
