Ingredients

  • 1 lb ground beef (80/20)
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups elbow macaroni (uncooked)
  • 2 cups beef broth
  • 1 cup whole milk
  • ¼ cup ketchup
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup shredded sharp cheddar cheese
  • 4 slices American cheese (optional)
  • ¼ cup diced dill pickles, plus more for serving

Method

  1. Brown the ground beef and onion in a large skillet over medium-high heat, about 6 minutes, then stir in the garlic, onion powder, garlic powder, salt, and pepper. Drain excess fat if needed.
  2. Add the macaroni and stir for 1 minute to toast. Pour in the broth, milk, ketchup, mustard, and Worcestershire. Bring to a boil, scraping up any browned bits.
  3. Cover, reduce heat to medium-low, and simmer for 10–12 minutes, stirring once, until the pasta is al dente and the sauce thickens.
  4. Remove from heat. Fold in the cheddar and American cheese until melted, then gently stir in the pickles. Serve right away with extra pickles on top.

Notes

The sauce thickens as it sits. If you’re not serving immediately, add a splash of broth or milk before reheating to loosen it back up.
