- Melt the butter in a large pot over medium heat, add the garlic, and cook for 1 minute until fragrant.
- Add the broth, milk, cream, pasta, a pinch of salt, and several grinds of pepper. Stir and bring to a boil over high heat, then reduce the heat to medium-low.
- Cover and simmer for 10 to 12 minutes, stirring occasionally, until the pasta is tender and the sauce thickens.
- Remove from heat, stir in the Parmesan and peas until the cheese melts and the peas are bright green.
- Toss to coat, then serve immediately with extra Parmesan and black pepper.
Notes
Break the fettuccine in half before adding it so everything fits in one layer; no need to be precise. For a thicker sauce, let the pasta sit off heat for a minute after adding the cheese—it will set up a little as it cools. Leftovers keep for up to 3 days in the fridge; reheat with a splash of milk.
