One-Pan Stuffed Pepper Casserole Recipe

Ingredients
  

  • 1 lb ground beef
  • 2 bell peppers, diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups cooked rice
  • 1 (15 oz) can tomato sauce
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups shredded cheddar or mozzarella cheese, divided

Method
 

  1. Preheat oven to 375°F. In a large skillet over medium-high heat, cook beef, bell peppers, and onion, breaking up meat, until beef is no longer pink, about 6 to 7 minutes. Drain fat. Stir in garlic and cook 30 seconds.
  2. Stir in rice, tomato sauce, diced tomatoes, Worcestershire, Italian seasoning, salt, pepper, and 1 cup cheese. Mix until well combined, then transfer to a 9x13-inch baking dish.
  3. Top with remaining 1/2 cup cheese. Bake 20 to 25 minutes until cheese is melted and casserole is bubbly.
  4. Let sit 5 minutes, then scoop portions onto plates and serve hot.

Notes

Let the casserole rest for a few minutes after baking so the layers set and make serving easier. The cheese on top will be nicely browned and stretchy.
