- Season chicken with salt and pepper. Heat oil in a large skillet over medium-high heat. Brown the thighs for 6 minutes on the first side and 4 minutes on the second, then transfer to a plate.
- Off heat, add garlic and ginger to the pan, then return to medium heat and stir for 30 seconds. Pour in bourbon and scrape up browned bits; boil 1 minute. Stir in soy sauce, brown sugar, and vinegar; simmer 2 minutes.
- Return chicken and juices to the pan. Spoon sauce over thighs, reduce heat to medium-low, and simmer 8 to 10 minutes, turning once, until sauce is thick and sticky.
- Arrange chicken on a platter or over rice, spoon remaining glaze on top, and serve hot.
Notes
Let the chicken rest uncovered on the plate while you build the sauce so the crust stays crisp. The glaze sets up quickly as it cools, so plate it right away.
