One-Pan Mediterranean Chicken Breasts Recipe

Ingredients
  

  • 4 boneless, skinless chicken breasts (about 6 oz each)
  • 1½ tsp kosher salt
  • ½ tsp black pepper
  • 1½ tsp dried oregano
  • 3 tbsp olive oil, divided
  • 3 garlic cloves, minced
  • 2 cups cherry tomatoes
  • ½ cup pitted Kalamata olives
  • ½ cup low-sodium chicken broth
  • 2 tbsp fresh lemon juice
  • ½ cup crumbled feta cheese
  • 2 tbsp chopped fresh parsley

Method
 

  1. Preheat oven to 400°F (200°C). Season chicken all over with salt, pepper, and oregano. Sear in 2 tbsp olive oil in an oven-safe skillet over medium-high for 4-5 minutes per side until golden. Transfer to a plate.
  2. Add remaining 1 tbsp oil to the skillet, sauté garlic 30 seconds. Add tomatoes and olives, cook 2 minutes. Pour in broth and lemon juice, scraping up browned bits.
  3. Return chicken to skillet, spoon some tomato mixture over top. Bake 10-12 minutes until chicken reaches 165°F (74°C) internally.
  4. Remove from oven. Crumble feta and scatter parsley over everything. Spoon pan juices on top and serve immediately with lemon wedges.

Notes

If your chicken breasts are larger than 6 oz, add 2-3 minutes of bake time. This dish is naturally gluten-free. A quick sear is key to keeping the chicken juicy; don't skip it.
