- Preheat oven to 400°F (200°C). Season chicken with salt and pepper. Melt butter in an oven‑safe skillet over medium‑high heat and sear thighs 3 minutes per side until golden. Remove to a plate.
- Reduce heat to medium‑low. Cook garlic in the pan for 30 seconds, then whisk in cream cheese, heavy cream, thyme, and a pinch of salt until smooth.
- Off heat, stir in Parmesan, return chicken to the skillet, and spoon sauce over top. Bake uncovered 12‑15 minutes until internal temp reads 165°F.
- Switch oven to broil. Broil 2‑3 minutes until the top is golden. Rest 3 minutes, top with parsley, and serve.
Notes
If the sauce separates under the broiler, a gentle whisk on the stovetop over low heat brings it back together. The chicken can be seared a few hours ahead; just assemble and bake when ready.
