- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then sear 4-5 minutes per side until golden. Transfer to a plate.
- Reduce heat to medium-low, melt butter, and sauté garlic for 30 seconds until fragrant.
- Pour in broth, scrape up browned bits, and let it reduce 1-2 minutes. Stir in cream, mustard, and Parmesan; simmer 2-3 minutes until slightly thickened.
- Return chicken to the pan, spoon sauce over, and simmer 5-7 minutes until chicken reaches 165°F (74°C).
- Serve over rice or potatoes, spoon on remaining sauce, and top with parsley.
Notes
If using bone-in thighs, increase the simmer time to 10-12 minutes and check the internal temperature near the bone. This dish comes together quickly, so have your sides ready before you start the sauce.
